Holland America is proud to be the first global cruise line to earn the worldwide seafood sustainability certification for our Global Fresh Fish Program, which means the brand offers more than 80 varieties of fresh fish, sourced locally across our worldwide network. Morimoto by Sea is the first restaurant at sea by Iron Chef Masaharu Morimoto, featuring high quality fresh fish and local ingredients. The restaurant was designed with sustainability in mind, and embraces natural elements fusing land and sea. The vision for the space has incorporated Air, Water, Fire, and Earth, while highlighting the creativity of Chef Morimoto. We’ve partnered with Ege, to carpet this space, who values circular thinking, and the furniture and leather was sourced responsibly by our sustainability partners. The bespoke artwork was commissioned by a new emerging artist in Italy. The backlit entry archway embodies the essence of the space’s concept, sustainable, organic, warm and welcoming.
Fun fact about Morimoto by Sea: The project team, which consisted of the designers, a project manager, interior superintendent and outfitter, consisted of 95% women.
